What Is Hibachi Cooking? A Complete Guide to the Art of the Iron Griddle

Hibachi cooking is a style of Japanese cuisine in which a chef grills meat, seafood, vegetables, and rice on a flat, high-heat iron griddle — called a teppan — directly in front of guests. It combines fast, high-temperature cooking with live entertainment: the chef performs the meal, from the onion volcano to the flying shrimp, as the food is prepared inches away from the table. The result is a meal that is equal parts dinner and show.

If you've ever sat around a large flat grill at a Japanese steakhouse and watched a chef flip, chop, and season your food in front of you, you've experienced hibachi.

Hibachi vs. Teppanyaki: What's the Difference?

The two terms are often used interchangeably in the United States, but there is a technical distinction.

Teppanyaki refers to cooking on a teppan — a flat, solid iron griddle. This is what most American "hibachi" restaurants actually use: a large, smooth cooking surface where the chef prepares proteins, fried rice, and vegetables.

Traditional hibachi in Japan refers to a smaller, open-grate charcoal brazier used for grilling over an open flame.

In everyday American usage — and in the catering world — "hibachi" has come to mean the interactive, chef-performed teppanyaki experience. When people search for "hibachi catering," they are almost always looking for the flat-griddle, cook-at-your-table performance.

What Makes Hibachi Cooking Unique

Three things set hibachi apart from ordinary grilling:

  • The high heat. The iron griddle runs extremely hot, which sears proteins quickly, locks in moisture, and gives vegetables a caramelized edge while keeping them crisp.

  • The performance. The chef is a performer as much as a cook — the knife work, the flame, the tricks, and the timing are part of the meal.

  • The freshness and customization. Because everything is cooked to order in front of you, hibachi is inherently fresh and easy to tailor — proteins, spice levels, and sauces are adjusted on the spot.

What Foods Are Cooked Hibachi-Style?

A typical hibachi spread includes:

  • Proteins: steak, chicken, shrimp, scallops, and lobster (and, at the high end, Wagyu beef)

  • Fried rice: cooked on the griddle with egg, vegetables, and soy

  • Vegetables: onions, zucchini, mushrooms, and bean sprouts

  • Signature sauces: the classic "yum yum" sauce and ginger sauce

  • Noodles: often available as an alternative or addition to rice

Everything is cooked in sequence on the same griddle, seasoned as it goes, and served hot straight off the iron.

Why Hibachi Works So Well for Events

Hibachi translates exceptionally well to catering and private events because the cooking is the entertainment. Instead of hiring separate catering and separate entertainment, a hibachi chef delivers both at once — which is why hibachi has become popular for weddings, corporate events, milestone birthdays, and backyard parties alike.

Because each portion is cooked to order, hibachi also handles dietary needs gracefully: proteins can be swapped, portions adjusted, and spice levels dialed up or down per guest.
