That last line is the whole reason to read this page. Most mobile hibachi cannot cook indoors, which in December is not a small limitation.
The propane problem, and why it matters in winter
Mobile hibachi equipment almost always runs on propane. Burning propane in an enclosed space produces carbon monoxide — a commercial burner running two hours in a closed garage, basement, or function room is a genuine hazard, not a theoretical one.
Several operators state plainly that they will not cook indoors, and they are right to. Which means for most mobile hibachi companies, a December booking is outdoors in a New England winter or nothing.
We bring electric griddles and our own battery power. No combustion inside the building, and no reliance on your circuits — which matters in older office buildings and function halls where the wiring is anyone's guess.
If a caterer agrees to run propane in your closed space in December without hesitating, ask what they're burning.

Company holiday parties
The two failure modes of a corporate holiday party are a room where nobody talks and an invoice that grew after approval. Live cooking fixes the first. A flat quote fixes the second.
Live hibachi gives a room a shared focus, which matters more for a team that's half remote and sees each other twice a year. People who don't normally talk end up at the same station.
Our quote is flat — no service charge appearing on the final bill, no automatic gratuity, no travel fee applied afterward. The number you send to finance is the number that gets billed.
Bar service is worth flagging to whoever approves it. Alcohol at a work function is a liability question, and licensed service with liquor liability covered is a materially different arrangement than someone from the office buying wine. We hold a Rhode Island Class P caterer's liquor license.
Family and friends at home
Christmas gatherings, Hanukkah dinners, New Year's Eve, Friendsgiving. The appeal is straightforward: nobody in the family spends the entire holiday in the kitchen, and nobody does dishes at eleven o'clock.
A chef and a dedicated attendant handle cooking, service, and cleanup. The host gets to be a guest at their own party, which is not something most catering actually delivers.
Three proteins for every guest also solves the mixed-family problem — no picking one and hoping it suits the nephew who won't eat fish.
Book early — December is the second-tightest month
Typical lead time: 2 to 3 weeks
December weekends: 4 to 6 weeks, earlier for the two weekends before Christmas
Corporate holiday parties: 6 weeks or more, since they usually need multiple stations
Chef scheduling: 4 hours between events per chef, so nobody rushes
Last minute: ask anyway — weeknights are far more open than weekends
Company parties and family gatherings compete for the same handful of December dates, and we cap how many events each chef does per day rather than stacking them.
Dietary restrictions
Gluten-free: entire menu including the noodles
Vegan: cooked separately, tofu as the protein
Shellfish allergy: managed by cook order — all seafood last, shellfish absolutely last
